Job Description

The Chef de Cuisine for Perry Place plays a crucial role in the supervision and management of a large university dining center, working under the direction of the Executive Chef. Responsibilities encompass various aspects such as menu planning, utilizing menu management software, food production and presentation, cost management, personnel management, customer relations, safety and sanitation, training, as well as the maintenance of facilities and equipment. The Chef de Cuisine for Perry Place will collaborate with management to maintain high-quality service and adhere to state and Virginia Tech policies.

Required Qualifications

* Graduation from an accredited culinary, hospitality or nutrition program with a minimum of an Associate of Occupational Science (AOS) degree or equivalent related experience.
* Substantial experience in commercial kitchen and food service operations, including menu planning, automated food ordering, food preparation, pricing, merchandising, and presentation.
* Previous experience in supervising and managing a high-volume food service establishment with a diverse menu.
* Strong leadership and communication skills.
* Ability to handle employee relations, training, and performance evaluations.
* Proficiency in food safety regulations, including HACCP.
* Excellent problem-solving and decision-making abilities.
* Strong organizational and time management skills.
* Flexibility to work in a dynamic and fast-paced environment.
* Valid driver's license with a safe driving record.
* A proven track record of maintaining high standards of quality, safety, and sanitation.
* Demonstrated knowledge of computers, including Windows, Microsoft Office, Outlook, and automated food inventory systems.

Preferred Qualifications

* Possess or acquire Chef de Cuisine designation through the American Culinary Federation (ACF) within 12 months of hire.
* ServSafe certification and HACCP certification.
